Red beans and rice, coming up soon! Maybe I went a little overboard on the garlic, but it's all good. I will not actually eat it until tomorrow. It's much better after sitting in the fridge overnight.
One tip.... When you are making a dish where there is a significant amount of celery, if the celery leaves are not wilted chop some up finely and put them in. They add a lot of flavor.
